Healthier Holiday Desserts with Purecane™ Sugar Substitute

Gingerbread Whoopie Pies with Cream Cheese Frosting

This recipe, courtesy of @lifebygabb, may go down in history as one of the most delicious holiday baked goods ever. Not only are you cutting down on sugar with Purecane™ Baking Sweetener, but you’re also introducing your friends and family to an innovative dessert that they likely haven’t tried before! These whoopie pies are the perfect balance of savory and sweet; read on for the full recipe and instructions.

Ingredients:

Whoopie Pies

  •  2 eggs
  • 1/4 cup coconut oil
  • 3 tbsp maple syrup
  • 1 tsp vanilla extract
  • 2 cups almond flour
  • 2 tbs cinnamon
  • 1 tbs nutmeg
  • 1 tbs allspice
  • 1/2 cup coconut sugar or Purecane™ Baking Sweetener
  • 2 tbs gingerbread spice 
  • 1 tsp baking soda
  • pinch salt

Frosting


Instructions:

  1. Preheat oven to 350 degrees. 
  2. Mix all the wet ingredients together in a large bowl. 
  3. Then add dry ingredients in. Mix together until combined. 
  4. Bake for 20-25 minutes. 
  5. While cookies are baking, make all the frosting ingredients together in a bowl to make the frosting. 
  6. Once cooled, add frosting to a cookie, then add another cookie on top (like a cookie sandwich). 
  7. ENJOY!
