No Bake Strawberry Charlotte Cake

Not wanting to turn the oven on during the heat, but still craving a delicious cake? Look no further than our refreshing and easy No Bake Strawberry Charlotte Cake! Layers of fresh strawberries, lemon-dipped ladyfingers, and sweet mascarpone makes this cake a crowd pleaser on a hot day.

Ingredients

  • 4 dozen ladyfingers
  • ¼ cup lemon juice or limoncello
  • ¼ cup water
  • ¼ cup + 1 tbsp Purecane™ Baking Sweetener
  • 8 oz mascarpone cheese
  • 1 tsp vanilla extract
  • Zest of 1 lemon
  • 1 cup heavy whipping cream + more for topping
  • 1 pint fresh strawberries, de-stemmed and quartered
  • Optional: ¼ tsp almond extract
  • Optional: Zest of 1 orange

 Strawberry Charlotte Cake Recipe - No Bake, Easy and Elegant Enough For A Party

Directions

  1. Set out a 9” springform pan.
  2. In the bowl of a stand mixer, combine the mascarpone, lemon zest, ¼ cup Purecane™ Baking Sweetener, and vanilla extract. Also include the optional orange zest and almond extract if you choose. Beat until smooth.
  3. Add the heavy whipping cream. Using the whisk attachment, beat on medium speed until stiff peaks form. Set aside.
  4. Working one ladyfinger at a time, break or slice off the very end (about 1”) of one side of the ladyfingers. Place sugar-side out and broken-end down along the sides of the springform pan. This helps the ladyfingers to sit straight up. Repeat with ladyfingers until they go around the whole pan.
  5. In a small bowl, combine the lemon juice (or limoncello) with ¼ cup water and 1 tbsp. Purecane™ Baking Sweetener. Dip a ladyfinger into the lemon mixture then place in the bottom of the pan. Repeat until the bottom is lined with ladyfingers.
  6. Evenly distribute half of quartered strawberries on top.
  7. Spread half of the mascarpone mixture on top of the strawberries.
  8. Repeat with a second layer of each ladyfingers, strawberries, and mascarpone mixture.
  9. Cover and chill in the fridge for a minimum of 4 hours (can leave overnight).
  10. When ready to serve, top with regular whipped cream and fresh strawberries. Use a serrated knife to carefully ‘saw’ each slice when serving. Enjoy!
