SUGAR-FREE VANILLA CUPCAKES

Vanilla Cupcakes without Sugar Ingredients
- 1 egg
- 1 tsp vanilla extract
- 1/2 cup almond milk
- 1 ¼ cup almond flour
- 3/4 cup coconut flour
- 1 cup Purecane™ zero calorie baking sweetener
- 1 tsp baking powder
Frosting Ingredients:
- 1 cup powdered Purecane™ zero calorie baking sweetener
- 1 tsp vanilla extract
- 1 tbsp unsweetened almond milk
Directions
- Preheat your oven to 350F.
- Line your cupcake tin with liners so they don’t get stuck.
- Blend all of your ingredients together (tip: do liquids first, then add in the powders)
- Pour mixture into the cupcake tins, filling about 3/4 of the way.
- Bake for about 18-20 minutes.
- While this is cooking make your frosting in a separate bowl.
- Let the cupcakes cool down for 10 minutes and then frost and add sprinkles as needed.
- Store in the refrigerator to keep fresh.
