VEGAN SOURDOUGH PUMPKIN BREAD WITH MAPLE GLAZED PEPITAS

A warmly spiced sourdough packed with delicious fall flavors. And yes, it’s vegan!

Ingredients

  • 1 1/2 cup whole wheat flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 tbsp pumpkin pie spice
  • 1/2 cup sourdough starter
  • 1 1/2 cup pumpkin purée
  • 1 cup sugar Purecane zero calorie baking sweetener
  • 1 tsp vanilla
  • 1/2 tsp Apple cider vinegar

 

Glaze

  • Pepitas 
  • Maple syrup 

Directions

  1. In a bowl, mix dry ingredients. 
  2. In another bowl, mix wet ingredients. 
  3. Add the dry ingredients to the wet ingredients and mix until combined. 
  4. Pour into the lined loaf pan and top with maple glazed pepitas (just mix pepitas with maple syrup).
  5. Preheat the oven to 350 degrees F and and bake for 55 - 60 minutes.
  6. Slathered with vegan butter and serve.
