Blueberry Popsicles
These reduced sugar popsicles are the perfect simple treat to add to your frozen repertoire! Ingredients:
- 5 cups wild blueberries
- ½ cup of water
- ¼ cup Purecane™ zero calorie baking sweetener
- 1 tablespoon lemon juice

Directions
- In a blender or with an emergen blender, puree your blueberries, water, Purecane™ zero calorie baking sweetener, and lemon juice. Strain the mixture with a fine-mesh sieve, pressing with a spoon or spatula to capture as much liquid as possible. Discard solids. Add water as needed to create 3 cups of your blueberry mixture.
- Divide evenly into popsicle molds, and freeze until solid, about 3 hours. (Lasts up to 1 week)
