LEMON POPPY SEED MUG CAKE

A sugar-free cup of pure perfection!

Ingredients

  • ¼  cup + 1 tablespoon flour
  • 1 tablespoon Purecane™ zero-calorie Baking Sweetener
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 teaspoon fresh lemon juice
  • 1 teaspoon poppy seeds
  • ¼ cup almond milk
  • ½ teaspoon vanilla extract

Icing Drizzle Ingredients: 


Directions

  1. Combine all ingredients together and place in a greased microwave safe mug. 
  2. Microwave for 1 minute 30 seconds.
  3. Carefully remove from the microwave (it will be hot) and place upside down on a plate. 
  4. Top with fresh strawberries, lemon zest and lemon icing. Enjoy!
