Ingredients

Chocolate Cookies and Cream Cake Ingredients:

  • 1 ¼ cup non dairy milk, at room temperature (can use milk of choice)
  • ½ cup melted butter, or coconut oil (can use vegan butter)
  • 1 cup Purecane™ zero-calorie Baking Sweetener
  • 1 teaspoon vanilla extract
  • 1 ½ teaspoon baking powder
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • ⅓ cup cocoa powder
  • 1 ¼ cup all purpose flour (regular or gluten-free)
  • 1 cup crushed oreo cookies (regular or gluten-free)

  • 1 cup crushed oreo cookies (regular or gluten-free)

Directions


Make The Cake:

  1. Preheat the oven to 375 °F and grease a loaf or round cake pan with non-stick baking spray, set aside.
  2. In a medium sized bowl, crush 8 to 10 oreo cookies into large bite-sized chunks (until you have about 2 cups) of crushed oreo cookies. Set aside.
  3. In a large mixing bowl, mix the milk of choice, melted butter or coconut oil, Purecane™ zero-calorie Baking Sweetener, vanilla, baking powder, baking soda, cocoa powder, and salt. Once the mixture is smooth, add the flour and mix until a thick cake batter is formed. Be careful not to overmix the batter or the cake will be dense and dry.
  4. Fold in half of the oreo cookie crumbles, about 1 cup. Transfer the batter into the baking pan and bake in the oven for about 25 minutes for a round cake or 35 to 40 minutes for a loaf pan.
  5. Remove from the oven and allow the cake to cool in the pan for a few minutes before removing from the pan and setting it onto your serving dish.

Topping Your Vegan Chocolate Cookies and Cream Cake:

  1. While your cake is baking, use a whisk to mix the Purecane™ Confectioners Sweetener, the vanilla extract, and milk of choice to make the vanilla icing.
  2. Drizzle the icing over the cake once it's cool (or while it's still warm) and then top the cake with the remaining crushed oreo cookies.
  3. Serve and enjoy!
