Bar Ingredients

  • ¼ cup vegan butter or coconut oil, melted
  • 1 cup unsweetened almond or oat milk, room temperature
  • ¼ cup Purecane™ Brown Sweetener
  • ¼ cup Purecane™ Baking Sweetener
  • ½ teaspoon lemon or orange extract
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 1 teaspoon baking powder
  • ½ teaspoon cinnamon
  • 2 cups all purpose flour (can use flour of choice)
  • ⅓ cup dried cranberries
  • ⅓ cup regular or vegan white chocolate chips

  1. Preheat the oven to 350°F. Spray a 12 inch round baking dish (or 9x11 inch baking dish) with non-stick baking spray.
  2. In a large mixing bowl, mix the melted vegan butter, almond milk, Purecane™ Brown Sweetener, Purecane™ Baking Sweetener, lemon or orange extract, vanilla, salt, baking powder, and cinnamon together. Then, add the flour and mix until a thick batter forms. Fold in the cranberries and white chocolate chips.
  3. Transfer the batter into the baking dish and bake for 35-40 minutes until golden. While the bars bake, make the cream cheese frosting. Mix the Purecane™ Confectioners Sweetener, vegan cream cheese, and softened vegan butter together. Set aside until ready to serve.
  4. Once the bars are done baking, spread them with the vegan cream cheese frosting. Sprinkle more cranberries and white chocolate chips on top and then slice the bars into 12 servings. Enjoy cool or warm!
