SUGAR-FREE SNICKERDOODLES

Directions

  1. Preheat the oven to 350 degrees and line your cookie sheets with parchment paper. 
  2. Mix the flour, salt, cinnamon and baking powder in a bowl. Set aside.
  3. Using a stand mixer (or hand mixer), mix together the Purecane™ Brown Sweetener and Purecane™ zero calorie baking sweetener with your butter for a couple minutes. Texture should be light and fluffy. 
  4. Next, mix in the eggs and vanilla extract. Be careful not to over-mix. Mix in your dry ingredient mixture until batter is just combined.
  5. Using a tablespoon or an ice cream scoop, grab a heaping spoon of batter and roll into a ball. Repeat until you’ve used up all your batter.
  6. In a separate bowl, combine your ¼ cup of Purecane™ zero calorie baking sweetener and ¾ tablespoon of ground cinnamon. 
  7. One at a time, dip your cookie dough balls into the topping mixture. Place on the baking sheet a few inches apart as your cookies will spread out while baking.
  8. Bake for 12-13 minutes.
  9. Allow to cool before serving. Enjoy!
