SUGAR-FREE SNICKERDOODLES
Ingredients
Cookie Ingredients:
- ¾ cup Purecane™ Brown Sweetener
- 1 stick of unsalted butter (room temperature)
- 2 teaspoons ground cinnamon
- 1 ½ cups all-purpose flour
- ¼ cup Purecane™ zero calorie baking sweetener
- 1 teaspoon baking powder
- ¼ teaspoon salt
- 1 large egg
- 2 teaspoons vanilla extract
Topping Ingredients:
- ¾ tbsp ground cinnamon
- ¼ cup Purecane™ zero calorie baking sweetener
Directions
- Preheat the oven to 350 degrees and line your cookie sheets with parchment paper.
- Mix the flour, salt, cinnamon and baking powder in a bowl. Set aside.
- Using a stand mixer (or hand mixer), mix together the Purecane™ Brown Sweetener and Purecane™ zero calorie baking sweetener with your butter for a couple minutes. Texture should be light and fluffy.
- Next, mix in the eggs and vanilla extract. Be careful not to over-mix. Mix in your dry ingredient mixture until batter is just combined.
- Using a tablespoon or an ice cream scoop, grab a heaping spoon of batter and roll into a ball. Repeat until you’ve used up all your batter.
- In a separate bowl, combine your ¼ cup of Purecane™ zero calorie baking sweetener and ¾ tablespoon of ground cinnamon.
- One at a time, dip your cookie dough balls into the topping mixture. Place on the baking sheet a few inches apart as your cookies will spread out while baking.
- Bake for 12-13 minutes.
- Allow to cool before serving. Enjoy!
