Vegan Green Velvet Cupcakes

Ingredients

Chocolate Cupcakes Ingredients:

· 2 tablespoons flax seed meal
· 4 tablespoons hot water
· 1 can full-fat coconut milk
· 2 tablespoons oat milk (can use milk of choice)
· 1 teaspoon vanilla
· 1 teaspoon baking powder
· 1 teaspoon baking soda
· ⅓ cup cocoa powder
· 1 ¾ cups oat flour (can use gluten-free or regular)
· Optional: ½ cup vegan chocolate chips

 

Vegan Green Velvet Cream Cheese Frosting Ingredients:

· 1 ½ cups Purecane™ Confectioners Sweetener
· 4 oz vegan cream cheese (can use regular cream cheese)
· 4 tablespoons softened vegan butter (can use unsalted butter)
· Green food coloring 
· Optional: green sprinkles

 

 

Directions

  1. Preheat the oven to 350 °F. Prepare the flax eggs by mixing the flaxseed meal with the hot water and setting it aside for 2 minutes until a gel forms.
  2. Mix the coconut milk, flax seed mixture, oat milk (or milk of choice), Purecane™ zero-calorie Baking Sweetener, vanilla, baking powder, and baking soda together. Then, add the cocoa powder and whisk in until smooth. Add the flour and mix just until a smooth batter is formed. Be careful not to over-mix, or the cupcakes will be dense. Option to fold in chocolate chips.
  3. Pour the batter into about 16 lined cupcake wells and bake in the oven for about 30 minutes.
  4. While the cupcakes are baking, mix the Purecane™ Confectioners Sweetener, vegan cream cheese, and softened vegan butter together to make the vegan cream cheese frosting. Mix in 2 or 3 drops of green food coloring, adding more to reach desired green color.
  5. Allow the cupcakes to cool before frosting them and the option to top them with green sprinkles. 
  6. Serve and enjoy!
