Gingerbread Cookies (Without Molasses)

Ingredients

Cookie Ingredients:

  • 1 ½ cups all purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup Purecane™ Brown Sweetener 
  • 6 tablespoons unsalted butter (room temperature)
  • ½ cup honey
  • ¾ teaspoon ginger powder
  • ½ teaspoon cinnamon powder
  • ¼ teaspoon clove powder

Royal Icing Ingredients:

Directions

  • Preheat the oven to 350°F. Line a cookie tray with parchment paper. Set aside.

 

Prepare Your Cookie Dough:

  1. In a medium-sized bowl, begin to stir the dry ingredients together (flour, Purecane™ Brown Sweetener, baking powder, baking soda, salt and all the spice powders). 
  2. Add Purecane™ Brown Sweetener and room temperature butter in a bowl and, using a hand or stand mixer, mix until the texture is soft and fluffy. Mix in honey. 
  3. Start to add half the flour mixture and fold until well combined. Add the second half of the flour and fold until all ingredients are well combined. Cover the bowl with saran wrap and then place into the refrigerator for at least 2 hours (so that cookies will hold their shape in the oven).
  4. Take the dough out of the refrigerator and roll it until it’s approximately ¼ inch thick. Cut shapes with a cookie cutter. Place them on the parchment paper-lined baking tray, about an inch apart. 

 

Make Your Cookies:

  1. Bake cookies for about 8-10 minutes. The longer you bake, the crunchier texture you will have. 
  2. When the cookies are done, remove from the oven and let them cool completely before decorating. 

 

Mix Your Icing:

  1. While your cookies cool, prepare your royal icing. Mix Purecane™ Confectioners Sweetener, vanilla extract, and milk until you have a smooth, icing consistency. Put icing into a small piping bag and then decorate the cookies. Let them sit for about 30 minutes so the icing can set.
  2. Serve and enjoy!
